On the Supramonte of Baunei in central-eastern Sardinia, generations of goatherds have come and gone over the decades, protecting nature and offering it to the new generations still intact and with the exceptional traces of their work in an area as spectacular as it is inhospitable. There are now few goatherds who carry on that ancient occupation, but they are the true experts of Supramonte, preserving in their memory and in their daily gestures a century-old life experience. Some of the old Coiles are still working and the hospitality of their owners allows one to appreciate the flavours, tastes and aromas of a simple, natural and genuine cuisine.
